Thyme honey is produced when bees gather nectar from the thyme flower that grows wild in the Central South Island region. It was brought to New Zealand by gold miners in the 1880's as a medicinal plant and as a herb. It is a member of the mint family and the flavour and aroma is herbal, pungent, and distinctive.
