Way of Life Health Shop's latest Community Health Stores free magazine "Health by Nature" contains a really nice snack recipe. Below is the recipe, and some ideas for adapting it to suit your specific tastes. The first person to come instore with their version of our recipe will receive a free Lifestream Organic Super Berries, and the second person will receive a free Ceres Almond Butter.
Raspberry Coconut Balls Recipe:
20 pitted dates
1 cup desiccated coconut - or shredded coconut
1/2 cup cashew nuts - or walnuts
1/2 cup almonds - or macadamias
2 tsps raspberry powder - or Lifestream Super Berries
1tblsp coconut oil - or nut butter of choice
100g of dark chocolate for decorating (optional)
Method: Soak dates in boiling water for 10 minutes then drain. Combine all ingredients in a food processor and blitz until smooth. Let mixture cool in fridge for 10-20 minutes. Use a tablespoon to scoop out mixture and roll into balls. Drizzle with melted chocolate and sprinkle with extra berries of desired. Store in the fridge in airtight container for up to 10 days if they last that long! Mine didn't!
