Intro to Nordic Cuisine.
Chef Finn Gybel trained in Denmark working under leading chefs who embraced the philosophy of cooking based on climate, landscape and waters. At the New Zealand School of Food and Wine, Chef Finn will explain and cook through a New Zealand inspired menu to reflect these concepts.
He will discuss some of the concepts that underpin the New Nordic Cuisine and how these ideas offer important themes for us to reflect on in New Zealand as we define our culinary traditions.
This evening course is of interest to all "foodies", chefs and people who have an interest in food.
Chef Finn comes with an impressive background, with experience working with Claus Meyer and Renee Redzepi (Noma). Click the link below to learn more about Chef Finn or better yet, meet him in person at the course.
