Yacon rhizomes for free.

Here's a couple of photos of our first yacon crop, from one plant. The pink rhizones can also be eaten, but can be a bit messy to clean. Plant the rhizones now, or within a couple of weeks, similar to as you would planting a potato. Then harvest them any time after the first frost next year. I like them best raw, like a carrot or in a salad. My partner likes them in stews, etc. But to cook them they need to be sliced. Also only dig up enough for a week or two, as they don't last long out of the ground. Though sometimes you can cover them in a bucket with a wet sack. At a guess they taste something like a nashi pear, very juicy and sweet. The photos show our first crop from one plant, also the plant as it grows above ground.
