Fantastic Feijoa Cake

It’s that time of year again, when plastic bags of feijoas sit on kitchen tables overflowing with generosity from our family or neighbours who are lucky enough to have a feijoa tree in their garden. But what on earth do we do with them all?

Loved by Kiwis, these little green beauties can be used in cakes, muffins, ice cream, preserves, salsas and much more!

Here is a super easy recipe for the best feijoa cake, a perfect afternoon treat!

What you’ll need:
Cake
• 3 large feijoas, peeled and sliced
• ¾ cup of caster sugar
• 2 large eggs
• 125g of butter, softened
• 1 tsp of vanilla essence
• 1 ¾ cups of self-raising flour
• ¾ tsp of baking soda
• ¾ tsp of ground cinnamon
Filling
• 1 cup of cream
• 2 Tbsp of icing sugar, plus extra to dust the cake
• 2 large feijoas, peeled and thinly sliced

Directions:
1) Preheat oven to 180c. Lightly grease 23cm cake pan and line base with baking paper.
2) Place fejioas in food processor with caster sugar, eggs, butter and vanilla. Process until smooth and transfer to bowl.
3) Sift flour, baking soda and cinnamon in a seperate bowl. Fold into feijoa mixture, be careful not to over-mix.
4) Tip into prepared cake pan. Bake for 30-35 minutes, until skewer inserted in the centre comes out clean.
5) Cool for five minutes, then remove from pan and place on a wire rack. When cold, cut in half through the centre.
6) While cake is cooling, prepare the filling. Whip cream and icing sugar together until thick. Spread half on the base of the cake.
7) Top filling with thinly sliced feijoas and cover with the remaining cream filling. Finally, replace the top half of the cake and dust lightly with icing sugar.
